Ingredients
- 1 can low sodium black beans
- 1 can whole kernel corn (no sugar added)
- 1 bell pepper
- 1 whole avocado (optional)
- 1/2 red onion
- 1/4 cup lime juice
- 2 tsp honey
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Corn or flour tortillas
Instructions
- Drain black beans and rinse. Drain corn. Mix together in a larger mixing bowl
- Chop bell pepper and red onion. Add to corn and black bean mixture
- In a separate bowl mix lime juice, honey, chili powder, cumin, salt and pepper together well
- Pour over veggie mixture
- Put veggie mixture in a tortilla for a delicious taco. Garnish with fresh cilantro and cheese
- Option: serve veggie mixture over cooked chicken breast or cooked fish
