Veggie Tacos

Veggie Tacos

  • 1 can low sodium black beans
  • 1 can whole kernel corn (no sugar added)
  • 1 bell pepper
  • 1 whole avocado (optional)
  • 1/2 red onion
  • 1/4 cup lime juice
  • 2 tsp honey
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Corn or flour tortillas
  1. Drain black beans and rinse. Drain corn. Mix together in a larger mixing bowl

  2. Chop bell pepper and red onion. Add to corn and black bean mixture

  3. In a separate bowl mix lime juice, honey, chili powder, cumin, salt and pepper together well

  4. Pour over veggie mixture

  5. Put veggie mixture in a tortilla for a delicious taco. Garnish with fresh cilantro and cheese

  6. Option: serve veggie mixture over cooked chicken breast or cooked fish
